Ingredients

  • Heavy cream (2 cups)
  • White vinegar (1 tablespoon)

  • Kosher salt (1/2 teaspoon)
  • Finely sliced onion (3/4 cup)
  • Jalapeno (6 slices)
  • Black peppercorns (2 tablespoons)
  • Cheddar cheese (2 cups)
  • American cheese (2 cups)
  • Homemade French fries (As much as you want)

Instructions

  • Set your heating equipment to medium-high heat and heat a pot. Then coating the pot using oil.
  • Add peppercorns, onions, jalapeno, and salt in the pot and keep sauteing for at least 4-5 minutes, which may need to be extended as well, until the onions are translucent.
  • Then start the next step by deglazing a pan adding the white vinegar at the same heat. At the same time, scrape the browned bits very carefully.
  • Then pour in the heavy cream in the pot and take 1 more minute to heat it. Turn off the heat and let the cream steep there for 30-35 minutes.
  • Now, use a mesh sieve (fine and smooth) to strain the solids out of the cream slowly. Then pour the cream back into the pot and set the heat to medium-high.
  •  Bring the cream to the boiling point. When you see bubbling showing up around the edges, pour both the cheeses by whisking and wait until smooth.

When the cheese is smooth enough, pour it over the French fries and serve as early as possible… Enjoy your Shake shack cheese fries!
