Ingredients

  • Raw chicken (1 cup; coarsely chopped, dark and light meat)
  • Buttermilk (1 cup)
  • All-purpose flour (1 cup)
  • Shredded lettuce (1/2 cup)
  • French Bread Stick (1 piece)
  • Dill Pickle Chips (8 chips)
  • Hot sauce (1/2 tablespoon)
  • Mayonnaise (2 tablespoons)
  • Tomato (4 slices)
  • To taste, salt
  • To fry, oil

Instructions

  • At first, you have to brine the raw chicken. Take a container, preferably sealable, add chicken, buttermilk, and hot sauce into the container, and stir to mix the ingredients. Then seal the container tightly and give at least 35 hours to sit properly.  It takes about 48 hours to get the best texture of chicken but giving it 24 hours will do the job.
  • Now, prepare the sandwich, take a shallow dish, put flour and a suitable amount of salt in the dish, and stir to mix up well.
  • Heat the oil at 260-degree Fahrenheit over your skillet. Take the chicken nugget out of the brine at the same time and place it in another shallow dish. Then, dredge the nuggets using flour, dip them in the buttermilk and put them back into the flour.
  • Get rid of the excessive oil and place the nuggets in the oil over the skillet. Keep frying until the nuggets get golden brown color on the edges. At the same time, the chicken chunks will get crispy and will be fully cooked.  Then remove the chunks from the oil and place them over a paper towel.
  • Slice the top third of the Italian bread and make a little space in the bottom to third. Pour the hollow part with mayo, chicken pickles, tomatoes, and shredded lettuce. You can add more mayo and sprinkle salt over the bread as per your preference to bring variation to your Chicken po boy sandwich recipe.
  • To finish off, place the top third back over the bread and serve the way you like.
