Ingredients
- Ground beef (80% lean; 1-1/2 pounds)
- Worcestershire sauce (2 tablespoons)
- Butter (2 tablespoons)
- Flour (2 tablespoons)
- Nicely grated white onion (3 tablespoons) *
- Canola oil, or a drizzle of olive oil
- Whole milk (1/2 cup)
- Dijon or English mustard (1 rounded tablespoon; about a squirt)
- Cayenne (1/4 teaspoon)
- Granulated garlic (1 teaspoon)
- Sharp yellow cheddar; shredded (1 package; around 8 ounces)
- Warmed and split pretzel hamburger rolls
- To tase, salt
- To taste, pepper
*** Grate the white onions in a bowl so that you can catch the juice.
For the Toppings
- Watercress sprigs
- Grainy Dijon mustard
- Chopped white onion
- Bread-and-butter or dill pickle chips
Instructions
- Over medium-high heat, heat the large cast-iron skillet or your griddle pan carefully.
- Then, combine the grated onion, Worcestershire along with the beef. Season these ingredients using salt and pepper as needed. Now, form, slowly, 4 large patties. The middle of the patties needs to be thinner for oven cooking. Be careful!
- Use the oil to drizzle the patties well and cook, turning occasionally, for 8-10 minutes.
- At the same time, over medium heat, heat the medium saucepan. Place the butter in the pan and whisk it when it starts to melt. Later on, whisk in, gradually, the milk and finish off by seasoning with salt.
- Keep cooking the sauce for 2 minutes, whisking often, till the sauce gets the desired consistency.
- Now, add the cayenne and garlic one by one and reduce the heat to low at the same time.
- At this point, add the cheese a little at a time at regular intervals, whisking properly, so the previous amount melts well.
- To finish cooking the Pretzel Haus pub burger, use the grainy Dijon on the bottoms of the spread the buns and prepare the burger. Use the chopped onion and some pickles to top initially.
In addition to the initial topping, you can now use the patties with some cheese sauce along with a few sprigs of watercress. Thus the bun tops well and gets the best feeling.
