Ingredients

For the seasoning

  • Lemon pepper (1/2 cup)
  • Mrs. Dash seasoning (1/2 cup)
  • Paprika (1/2 cup)
  • Lemon pepper (1/2 cup)
  • Kosher salt (1/2 cup)

For the roast chicken

  • Roasting chickens (6 pounds)
  • Lemon juice (8 ounces)
  • Italian dressing (16 ounces)
  • Roast chicken seasoning (1/3 cup)

Instructions

  1. Take a large bowl and mix all the chicken seasoning ingredients in that bowl. Then set it aside and store it in a safe container.
  2. Now, in a 2-gallon plastic bag (must be sealable), place all the chicken. Pour in the lemon juice along with the Italian dressing mixture, turning the mixture into a coat.
  3. Then marinate the chicken and keep it in the refrigerator for 3-4 hours. Make sure to turn it in every 30-35 minutes.
  4. Then take the chicken out of the bag and let it drain. At the same time, preheat your oven to 380-degree Fahrenheit.
  5. Use the roast chicken seasoning to season the chicken gently but generously.
  6. Now, arrange the chicken on the baking pan and keep the pan on a rack. Then use foil to tent the loosely.
  7. Bake the chicken for 1-1.5 hours or more, as long as it takes to reach 170-180 degrees Fahrenheit in a meat thermometer.

Make sure to remove the tent 20-25 minutes before you finish the baking process. Then stop baking and let the chicken stand for around 10-15 minutes and serve the Famous dave’s bbq chicken.

Tips and Tricks

  • I don’t take more than 4 hours to marinate the chicken. But there is no wrong marinating it overnight. In fact, some people do this. It might make the chicken juicer. So take your chances for diversity.
