  • Unsalted butter (3 tablespoons)
  • Extra-virgin olive oil (2 tablespoons)
  • Milk (2 cups)
  • Heavy cream (1 cup)
  • Finely peeled and lengthwise halved garlic (8 cloves)
  • 3-inch pieces Yukon gold potatoes (4 pounds)
  • Salt (1 teaspoon)
  • Freshly ground white pepper (1/4 teaspoon)
  • To tase, more salt as per your need


  • Step 01: Take a medium-size saucepan, fill it up with water and bring to boil over medium-high heat. Add the sliced potatoes to the already boiling water. Then add the salt, and garlic gradually after reducing the heat to a simmering point.
  • Step 02: Now, cook the ingredient for 20-22 minutes or more with the lid covered. Make sure to keep cooking until the garlic cloves and potatoes become easily pierceable with a fork.
  • Step 03: At this stage, get rid of the extra water by draining and put the potatoes back to the saucepan, and set the temperature to high. In your stove, toss the potatoes for 2-3 minutes, which will dry off the moisture from the potatoes.
  • Step 04: Then, transfer the potatoes to a large bowl and mash them finely using a wooden potato masher. 
  • Step 05: To melt the butter, take another medium-size saucepan, and melt the butter over medium heat. Then add extra virgin olive oil, heavy cream and milk to the saucepan. Keep stirring until the mixture gets thick.
  • Step 06: Now, add up the mashed potatoes after whipping with a whisk for 5-6 minutes. It will also make the potatoes smooth. Then add the garlic stirring to the saucepan and you will notice an impressive aroma coming from the dish.
  • Step 07: At some point, the consistency will reach to the puree. Then sprinkle some pepper and salt for seasoning as per your choices.

Then, remove the dish from the heat and put it in a casserole dish to serve it right away.

Recipe Note

Half-and-half is thickened milk using additives like corn syrup. Consequently, it is thicker and more luscious than milk. It looks like shelf but tastes almost like milk. It is also rich and less decadent compared to cream.
So, you can use half-and-half instead of milk and cream in step 05.
