- Natural Creamy Peanut Butter of Smucker’s & reg, or Creamy Peanut Butter of Jif & reg (1 and ½ cups)
- Softened butter (1/2 cup)
- Powdered sugar (3-4 cups)
- Salt (1/2 teaspoon)
- Vanilla extract (1 cup)
- All vegetable shortening of Crisco & reg (2 tablespoons)
- Chocolate chips, semi-sweet (2 cups)
Directions for cooking Jif peanut butter buckeye recipe
- Add and mix vanilla extract, butter, peanut butter, and salt finely in a large bowl. To get a perfect blend, beat these ingredients at low speed using an electric mixer. Then add two cups of the powdered sugar and keep beating until the ingredients are perfectly blended.
- Add the remaining powdered sugar and beat for some more time to make sure if you shape the blend into balls, the balls will stay on toothpicks. Then shape the blend into 1 to1.15-inch ball and refrigerate.
- Then in a microwave-safe bowl, take the shortening and chocolate chips and Microwave for 35 seconds on medium heat. Stir the ingredients until there is a smooth mixture. Then coat the peanut butter balls using this mixture. Reheat the mixture when necessary.
- At this stage, insert the toothpicks in those balls and dip the balls into chocolate but leave the top uncovered as the top resembles buckeye. Then get rid of the excess chocolate and put the balls on a paper-lined tray of wax.
- If there is any hole in the balls, smooth over immediately.
- Then finish the Jif buckeye recipe by refrigerating the balls until firm.
Recipe Notes
- You are always at liberty to use a blend of the two chocolates or use any milk chocolate of your liking. However, I recommend using high-quality store-bought chocolate, which will easily and smoothly soften without any problem. On the off chance that the chocolate is excessively thick, use any shortening (1 tablespoon) that will thin the chocolate within minutes.
