Let me give an absolute, and total disclaimer concerning the gluten-free skinny and superbly tasty almond flour peanut butter cookies. These cookies are very dangerous! These are so dangerously good that you won’t be able to stop craving the cookies for a single moment! Hard to believe my words? Well, prepare the cookies yourself, and you will understand the difference.

There is nobody who doesn’t go through a phase in life with sweet tooths, which makes them crave cookies.

But for some people, like me, this phase is never over, and they crave cookies their whole life. And if you have a top-notch cookie recipe to prepare genuinely fantastically, then there is nothing stopping you! This is such a recipe!

When I was a kid, my grandmother was used to prepare these cookies every weekend. Thus, these healthy peanut butter cookies became just like a family favorite. Later on, although my mom had the duty to prepare these cookies, I learned it from my grandmother directly. Today, I’m sharing my grandmother’s version of almond flour low carb cookies.

Cookies Ingredients

  • Peanut butter of room temperature, creamy (1/2 cup)
  • Almond flour (2/3 cup)
  • Vanilla extract (1 teaspoon)
  • Melted coconut oil (1/2 cup)
  • Eggs, room temperature (2 large eggs)
  • Baking powder (1 teaspoon)
  • Eats sweetener, joy-filled (1/2 cup)
  • To taste (salt (1/2 teaspoon)

Sweetener substitution

I sometimes use a blend of stevia, a blend of xylitol, and a blend of xylitol instead of the sweetener. This is usually as good as sugar but twice as sweet. This blend can also be substituted by honey.

Recipe Directions

  • At first, you have to preheat your oven to 350-degree Fahrenheit.
  • Now, take a parchment paper and use this paper to make a line of a big cookie sheet.
  • In an electric mixture, mix the sweetener, coconut oil, and peanut butter. Keep mixing until the mixture becomes totally smooth.
  • Add up all the remaining ingredients and mix them all finely, making a smooth blend.
  • At this point, scoop at least 10 big cookies onto the already prepared baking sheet.

Pro tip: These cookies tend to spread out the moment you place them over the baking sheet. So, either you have to have a huge cookie sheet, or you have to divide the cookies into two sections using two pans.

  • Keep baking the cookies for at least 15 minutes. By this time, the cookies should get golden brown by the edges. Or, you may need a bit more time.
  • Place the cookies on the parchment paper after carefully taking them away from the baking sheet.
  • Then, give the cookies enough time so that they cool down fully. The cookies will firm as they cool down.
  • Serve the way you like

Recipe Notes

  • Although these cookies can be cooked in a non-preheated oven, it will take more time. So, reheating is certainly a wise move.
  • This recipe will make 10 big cookies. And per serving of 1 cookie offers only 2 net carbs.
  • You can add more of the salt (1 teaspoon). Some people like it saltier while some don’t like it that way. That’s why I keep the amount of salt limited.

How to store and freeze these low carb peanut butter cookies?

Almond flour comes up with a massive amount of moisture and fat. Thus, these cookies can be stored longer compared to any other cookies of their kind.

To Store: Give the cookies enough time so that they cool down fully, and then put them in an airtight container. Make sure you keep the container away from heat, and the cookies will remain good for up to 4 days easily.

But, if you want to store the cookies for a bit longer period without actually freezing the cookies, you have to wrap, in plastic wrap, a couple of cookies together. Then place the wrapped cookies in the airtight container. Doing so will keep the cookies fresh and eatable for up to 7-8 days.

To Freeze: At, first place the cookies over a baking sheet then render them flash freeze. After that, put the cookies in a freezer-safe bag and place in the freezer. They will remain good for up to 2 months easily.

Why do the ingredients must be of room temperature?

Because ingredients of room temperature always provide a better result when you bake cupcakes, cookies, cakes, and many more things like these. Besides, the ingredients we have used in this recipe, such as eggs, butter- always melt better if they are at room temperature.

Nevertheless, you can also use cold ingredients. But to get those cold ingredients ready (light and fluffy), you will have to use a stand mixer and mix them up to 10-12 minutes.
