Pressure cooker steak is a pure American cuisine, which is juicy, mouth-watering, pretty easy, and very quick to get done using only an instant pot.
When I was living with my family, my mother was used to preparing steaks in a pressure cooker every other week. Then I moved out to continue my higher study. Then I bought an instant pot which I knew to aid me cooking several dishes faster than ever. It actually did; although I was a new instant pot user, I was really thrilled seeing how good the steak in instant pot worked out the first time I tried it.
The meat was amazingly tender with a fascinating texture. From then to these days, I prepare this steak every other week, and sometimes every other day. This recipe takes a 5-minute preparation time, and only 20 more minutes to finish cooking! Very fast and straightforward!

Recipe Ingredients
Ingredients for the steak
- Any cheap steak or round steaks (2 pounds)
- Butter (2 tablespoons)
- Finely minced garlic (2 cloves), or garlic granules (1/2 teaspoon)
- Parsley (1/4 teaspoon; optional)
- Black pepper (1/4 teaspoon; optional)
- To taste, salt (as per your need)
Ingredients for the gravy
- Cornstarch mix (1 tablespoon; must be mixed with cornflour or water or to form cornflour slurry)
- Water or beef broth (1 cup)
- Finely minced garlic clove (1 clove)
- Chopped onion (1 medium onion)
Reicpe Instructions
- In a small bowl, blend the butter and garlic and set aside. Render/pat the round or cheap stick dry using a kitchen towel. Then rub the steaks with black pepper, parsley, salt, and oregano.
- Add 1 tablespoon of the butter and 1.5 cloves of the garlic in the inner pot of the instant pot after setting the instant pot to sauté mode.
- Then add the steak in the same pot and keep searing, without moving, for 2 and a half minutes, then flip or turn over and sear the opposite side for another 2 and a half minutes more. Set the steak aside on a plate.
Pro tips: If you prioritize rare steak, you have to sear both the side of the steak for 3 minutes. Then wait at least a few minutes to allow the steak sit and cool down before serving.
- Take the inner pot out and add all the finely chopped onions, rest of the garlic, and beef broth in the inner pot. Then scrape the interior of the pot lightly and carefully to deglaze.
- Now, put down a trivet in the bottom of the inner pot of your instant pot and spread the seared steak nicely on the trivet.
- Put the vent of the instant pot in a sealing position after covering the instant pot with its lid. Set the instant pot to pressure cook mode in the high setting and perform a 5-6 minutes natural release.
Pro tips: If you want the steak medium or lightly done, perform the quick release as quickly as humanly possible.
- When the instant pot depressurizes, open the pot quickly and take the steaks out, and set them aside in a plate.
- At last, mix the rest of the butter and garlic and spread this garlic butter mix on top of the cooked steaks. The let the steaks rest for 6-7 minutes and serve with the sides as per your liking.
How to Make Gravy
- When you take the steaks out of the interior pot, strain all the ingredients that are left in the interior pot. Then return the liquid content back into the instant pot right away.
- Now, to make the gravy warm for the cornflour slurry, set the instant pot to sauté mode.
- Mix the cornstarch mix and add the cornflour slurry to the pot. Start to stir heavily and keep stirring until the gravy becomes thick up to your preference.
- Then remove the inner pot from the heat.
- Serve the pressure cooker steak with gravy and enjoy!
Recipe Notes
- After you complete the searing process, you must deglaze the instant pot to avoid burn error when you move for the pressure cooking.
- You must let the steaks cool down for at least 6-7 minutes before you cut into them.
- After taking the steaks out of the instant pot, don’t be late to top the steaks with butter and garlic mixture. Otherwise, the butter will not melt properly. Also, collect the juice to enrich the gravy.

How to store pressure cooker steak?
Let the steak cool down completely, and then put in an air-tight container or freezer-safe bag to serve in the right way.
Then the steaks can be stored in the fridge for at least 4 days. If you freeze the steaks, they will be good for up to 120 days or 4 months. To reheat, use your oven.
